Okanagan Field Blend
Tasting notes
Concentrated ripe-pepper aroma on opening — dried fruit, raisin, the sweetness of sun-warmed capsicum. Heat builds from the mid-palate through the finish, carried by ripe-stage Fresno and red Jalapeño, with a slower secondary lift from Mirasol. No front-loaded spike. The finish is clean — no bitter fade, no grassy aftertaste.
We grind in two stages: fine fraction and coarse micro-flake — larger dried pepper fragments that retain distinct varietal texture — ground separately, then blended. Distinct pepper character comes from the micro-flake as you chew; entry heat from the fine fraction. A single-grind powder cannot produce that layering. Try it on eggs first, or on anything you'd finish with smoked paprika.
The blend
We grow five varieties, each selected for a specific role. Each is harvested separately as it hits the right ripeness stage through the picking window, dried separately, and held in the Spice Library — our dried-pepper inventory, organized by variety and ripeness fraction — then blended at grind time against the Target Profile (our defined sensory standard for aroma, sweetness, heat curve, and finish) — not locked in at planting. The varietal composition of each batch is logged and printed on the back label.
| Poblano | Primary body and varietal depth. Thick-walled, slow-drying, ripe-stage harvest only. |
| Anaheim | Mid-ripe bridge between Poblano weight and Fresno brightness. |
| Fresno | Vivid color, high-BRIX (sugar accumulation) consistency, primary heat contribution. Thin-walled, fast-drying. |
| Jalapeño M | Primary heat carrier. Ripe-red only — green-stage is grassy in powder form. |
| Mirasol | Earthy undertone, slow secondary heat lift. Brittle when dry. |
Standard and rejection
We evaluate every batch against the Target Profile before packaging: aroma, sweetness, heat curve, finish, and color on grind. Batches that pass ship as Flagship at $15.00. Batches that don't meet the Flagship standard move to Tier 2 — off-spec product sold as ingredient-grade bulk, not under the Quiet Fire label at a discount.
The 2026 harvest is the first year of production. Volume is limited.
Availability
The 2026 batch is not yet available. The harvest window opens approximately September 20 and runs through October as each variety reaches the right ripeness stage. Orders ship as batches clear the standard — typically October. Leave your email on the home page to be notified when orders open.
